The cuisine of Aurangabad is very different from the rest of Maharashtra. Since the city was ruled by the Mughals and the Nizams, the cuisine here exudes the flavour of North India and Hyderabadi cuisine. The city has intelligently learnt the art of blending spices to create some out of the world delicacies. Those who love to indulge in mouthwatering dishes will have a great time while touring the city. Devour a plate of the famous flavoured Nawabi biriyani or the aromatic pulao and feel regal!
The meat dishes here are prepared by using fresh herbs and spices. The important spices used here are fenugreek, cumin seed, garlic and chilly. Try rabri, sevian, orange phirni and many more. Naan Qalia is the specialty of Aurangabad. Naan is the bread made in tandoor while Qalia is a mixture of mutton and various spices. The Tahri or Tahari is also very popular in Aurangabad and Marathwada. It is just like the non-veg form of the pulao or biryani.
